Virtually every state in the nation has its own take on a cooking style we’ve come to know and love over the last six centuries in the U.S. – good old-fashioned BBQ. In most BBQ circles, four recognized regions represent the pinnacle of BBQ cooking styles: Kansas City BBQ, North Carolina BBQ, Memphis BBQ, and Texas BBQ. All based on fire, smoke, and sauce – just like Woody’s Bar-B-Q. While we take pride in our own spin on Classic Southern BBQ that has stood the test of time for more than 40 years, several items on our menu pay tribute to those four regions. We invite you to try them all and let us know which style resonates best with you and your tastes.


Kansas City BBQ

Kansas City has a rich history – largely steeped in the livestock industry, with its bustling Stock Yards in the West Bottoms. In the late 1800s, it was the second-largest livestock trader in the nation. By the early 1900s, the Kansas City Stock Yards covered over 200 acres, had a daily capacity of 170,000 animals, employed over 20,000 people, and shipped livestock to 42 states in the nation, plus Canada and Mexico. Cattle pens and meat-packing plants peppered the area. In keeping with that history, Kansas City BBQ is often associated with a smorgasbord of meats – slow-smoked beef, pork, and chicken, slathered in a sweet molasses-based sauce.

North Carolina BBQ

Since BBQ was believed to first land in the South, along with the arrival of Spanish explorers, carrying their delicious discovery of “barbacoa” from the Caribbean, North Carolinians were among the earliest settlers to suggest their own spin.  In a battle of East vs. West styles, Eastern NC BBQ often involves the whole hog –  rubbed with a blend of spices, slow-smoked over hickory, chopped, and served with a sauce that’s a blend of tomato paste and vinegar. Western NC BBQ – more popularly known as Lexington-style – commonly features pork shoulder, slow-smoked over hickory until it’s falling off the bone, then pulled and served in a similar vinegar-based sauce – most often with red slaw.

Memphis BBQ

When it comes to Memphis-style BBQ, it’s all about the rub—a blend of seasonings like paprika, garlic, salt, pepper, sugar, cayenne pepper, and more. The dry rub not only flavors the meat but also helps lock in the moisture. A major focal point for Memphis BBQ is pork ribs, which brings us to Woody’s tribute to this particular region…

Texas BBQ

Last but far from least, Texas-style BBQ emphasizes beef—as one might imagine from the state that holds the title of King of Cattle with a massive cattle population of 12,000,000. Dry-rubbed, slow-smoked beef brisket reigns supreme in the Lone Star State. It’s also a major contender on the Woody’s Bar-B-Q menu…
